<p style="text-align: justify;"><strong>Arbi cutlet by Chef Jashan Arora</strong><br /> <strong>Ingredients:</strong> You will need cola cassia (Arbi), 1 teaspoon (red chili powder, jeera powder, mango powder, chaat masala, lemon juice) respectively, rock salt as per taste, fresh coriander for garnishing.</p> <p style="text-align: justify;"><strong>Method:</strong><br /> Wash and rinse your Arbi first. Then give it a boil in your pressure cooker. Once released the pressure, peel off your Arbi and smash it with your palm. Heat your tawa and drizzle some oil in it. Now fry your Arbi till it's golden brown crisp on each side. Mix your spices in a bowl. Now, toss your cutlets in the seasoning and squeeze the lemon juice in it. Garnish it with coriander and serve it hot with any spicy or sweet chutney.<br /> </p>

Saute the nuts until they are crisp. Chop the dates and add it to your milk. Now, add the saffron and let it cool down. Now add the phenis and nuts in the saffron milk and cook it for 5 mins. On the other side, melt your jaggery and then add it to your milk. Serve warm after garnishing with some chopped dates, sauteed nuts, and few strands of saffron. <br /> </p>
Jaipuri Pheni Kheer by Chef Mohit Tak
Ingredients: 100 gms of Pheni Roll, Full Cream Milk 1 ltr, Jaggery 50 gms, Nuts 50gms each (cashew, almonds, dates, pistachios), saffron a pinch, Cardamom 4-5 pieces, Desi Ghee 100ml
Method:
Boil your milk for 5 mins in a heavy pan. Saute the nuts until they are crisp. Chop the dates and add it to your milk. Now, add the saffron and let it cool down. Now add the phenis and nuts in the saffron milk and cook it for 5 mins. On the other side, melt your jaggery and then add it to your milk. Serve warm after garnishing with some chopped dates, sauteed nuts, and few strands of saffron.

Grease your cake mould with little oil or butter. Mash your ripe bananas and mix it with brown sugar in a mixing bowl. Now, add eggs to the mixture. Now, add flour, baking soda, cocoa powder, choco chips, and fold in together. Now shift the mix in your baking mould and garnish it with chopped walnuts. Bake it for 30 minutes. Now, demould your cake and decorate it with cream cheese frosting (optional).</p>

Now, add flour, baking soda, cocoa powder, choco chips, and fold in together. Now shift the mix in your baking mould and garnish it with chopped walnuts. Bake it for 30 minutes. Now, demould your cake and decorate it with cream cheese frosting (optional).
